I’m sure lots of people aren’t keen on cabbage, but leafy greens are great for low carb keto diets. It’s a shame I can’t eat too many leafy greens with my warfarin, but eating a bit regularly isn’t affecting my INR readings so far thankfully. But generally eat away, there’s so much goodness, and it’s tasty. I tend to buy pointed cabbage rather than savoy as it’s a less distinctive case and means the rest of the family might eat some if I do cabbage as a side for them. But generally I just use it for my own low carbs meals. One of the latest dishes I tried was a ham and cabbage casserole, and it was delicious.

I’d tried Choucroute Garni the week before, and that was tasty too, but I liked this cabbage and ham casserole better. I had ham that needed eating, rather than bacon, but if you’ve got bacon that works too. Just cook the bacon first – grill it or fry it, however you wish.
I used leftover ham from a packet that needed eating up. It would be nicer with home cooked ham or chunkier ham hock, but use whatever you have.
As for vegetables, you can add whatever you want. I’m a bit of a throw it all in person, but for flavour you want diced onion, a bit of garlic (dried garlic granules or powder works, but fresh garlic is preferable), then chop up whatever other veg you like. I stuck with celery and sugar snap peas to stick with a nice greens dish. Paprika adds a bit of warming spice, but just a touch.


Then it’s just cream cheese or sour cream for a cheats cheese sauce on top of the lightly cooked veg. Topped with grated cheese – I used cheddar, but any cheese that melts well and crisps a bit is good. Try mozzarella, gruyere or parmesan, or a mix of whatever you have in the fridge. I used sour cream on mine, and it did go a little watery at the bottom of the baking dish, so cream cheese will avoid that. But it tasted great, and the cheese topping made it feel much more than a boring cabbage dish.



You could serve this as a side if using bacon, but I had it as a main and it was plenty filling enough for me.
